Muscovy Duck Breast

SCORE duck skin…

SEAR duck breast on both sides for approx 3-4 min. per side…

COOL at room temperature for 15-20 min.

REDUCE 2 cups of pomegranite juice + maple syrup OR honey + lime juice…

BRUSH pomegranite glaze on duck…

BROIL duck in oven for 6 minutes…

COOL for 5 minutes…

SLICE and serve with sautéed spinach and potatoes (topped with parsley and butter)…
